This is my first brewing failure. I can only think that the cause of my issues was the rice malt. This brew smelled fantastic fermenting, but the taste is just horrible. Hopefully when I learn more about brewing I can work out what went wrong here.
I've made a pure brown rice syrup beer...terrible, tried an all sorghum...terrible. I really am not liking the gluten free extracts, they ferment to have very strong tastes that aren't very desirable to me.
I'm going to malt some of my own quinoa, I've heard it has a nice nutty flavor...but honestly I'm not holding my breath.
I highly recommend checking out http://www.homebrewtalk.com/f164/ they have lots of information on brewing and malting gluten free grains. Sorghum is definitely an acquired taste but some recipes cover it up well.
